Cajun (or more properly Acadian) came from a completely different root language- it's sort of derivative of French.

There's an interesting book that talks about some of the difference in being Southern, "The Southern Belle Primer".  Even goes into what the selection of silverware paterns says about the personality--almost like an astrological prediction.  Funny, funny!
